AI Tool Predicts Avocado Freshness for Consumers and Industry
A groundbreaking AI tool developed by researchers at Oregon State University and Florida State University aims to predict avocado ripeness using smartphones. Set for release within a year, this technology analyzes images of avocados to assess their internal quality and maturity, addressing the gap in consumer understanding of fruit ripeness. The findings were published in Current Research in Food Science. The AI model, which utilized over a thousand images of Hass avocados, boasts an impressive accuracy—92% for firmness and 84% for distinguishing fresh from rotten fruit. Beyond avocados, the tool has potential applications for other fruits like pears and bananas, helping farmers decide optimal harvest times and retailers manage inventory. With an emphasis on user-friendly explanations, this innovative technology could revolutionize freshness assessment in the produce industry, improving consumer experiences and reducing food waste.
