The FDA has launched Elsa, an internal AI tool aimed at enhancing food safety oversight by reviewing safety data, identifying labeling issues, and prioritizing inspections. While Elsa will not interact with consumers or write labels, its implementation could lead to quicker responses to food safety risks and recalls. This initiative comes amid growing consumer concerns over AI in food production; a recent survey revealed that 83% of consumers favor transparency regarding AI involvement in food development. Although there are currently no federal laws requiring such disclosures, discussions about whether AI-assisted products can be labeled “natural” are intensifying. As AI technology becomes more ubiquitous in food formulation and supply chains, clarity and trust concerning its use are paramount. While Elsa is still in early stages, its role in streamlining processes may significantly impact food safety responses, improving how swiftly critical information reaches the public.
